Ingredients:
- 1 lb. jumbo lump crab
- 1 lb. Back Fin crab meat
- 1 egg
- 1 tbs. dijon mustard
- 1 tbs. worcestershire sauce
- 1/2 tbs. old bay seasoning
- 1/2 cup mayonnaise
- 1/4 cup chopped green onion
- 2 shots tabasco sauce
- salt and pepper to taste

- Drain crab well.
- Combine all ingredients (EXCEPT the crab meat) into a bowl. Whisk until well incorporated.
- Gently fold crab into liquid mix.
- Scoop into 3 oz. portions.
- Lightly coat each with Japanese bread crumbs (Panko).
- Pan-fry in canola oil, turning each side until golden brown.
