Reel Club Crab Cakes

  • Ingredients:

  • 1 lb. jumbo lump crab
  • 1 lb. Back Fin crab meat 
  • 1 egg
  • 1 tbs. dijon mustard
  • 1 tbs. worcestershire sauce 
  • 1/2 tbs. old bay seasoning 
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onion
  • 2 shots tabasco sauce
  • salt and pepper to taste
  1. Drain crab well.
  2. Combine all ingredients (EXCEPT the crab meat) into a bowl. Whisk until well incorporated. 
  3. Gently fold crab into liquid mix.
  4. Scoop into 3 oz. portions.
  5. Lightly coat each with Japanese bread crumbs (Panko).
  6. Pan-fry in canola oil, turning each side until golden brown.
